A long time favourite, this sparkling wine is made from Blauer Wildbacher grapes that have been macerated on the skins for 10 to 12 hours. "Schilcher" is typically a local still rosé wine, but because the variety is high in acidity, it is also very suitable for sparkling wines. The Strohmeiers allow the fermentation to start spontaneously in stainless steel tanks to preserve the fruitiness of the wine. The second fermentation is then carried out in bottle, without any filtration, which makes this a lightly sparkling wine with interesting yeasty notes.
